Red yeast rice - origin and use
Fermented red yeast rice has its origin in East Asia, where it has been used in food preparation for a long time. It is primarily used there to improve the taste and colour of food. A well-known dish in which red yeast rice is used for colouring is the Peking duck, for example. It is also traditionally used in TCM.
Red yeast rice - preparation
In order to obtain red yeast rice, conventional white rice is fermented by adding a mouldy fungus (Monascus purpureus). During this fermentation process, the natural ingredients of the rice are converted. This produces numerous new substances, including bioflavonoids, unsaturated fatty acids, amino acids and red pigments. However, the most interesting substance for humans is Monacolin K.
Fermented red yeast rice should not be confused with rice varieties that are naturally red or red skinned.
