Red Yeast Rice - Production
To obtain red yeast rice, conventional white rice is fermented by being inoculated with a mold (Monascus purpureus). However, the most interesting substance for humans that is produced is Monacolin K.
Fermented red yeast rice should not be confused with naturally red or red-husk rice varieties.
