Fermented red yeast rice is primarily common in China. Rice is fermented with the mould fungus Monascus purpureus, which gives the rice its characteristic, intense red colour. Besides its function as food, it is also part of the Traditional Chinese Medicine.
Red yeast rice - cholesterol
Red yeast rice contains the ingredient monacolin K, which is a cholesterol synthesis inhibitor. It is able to slow down the cholesterol production in the liver. Unlike cholesterol lowering medication, which can cause severe side effects, red yeast rice is well tolerable.
