The yam is one of the starchy vegetables. It is a tuber of the Dioscoreaceae family and is available in over 800 different species. The yam root is widespread in the tropics, where it is mostly cultivated as a crop. The main growing areas are currently in Africa, more precisely in Nigeria, the Ivory Coast and Ghana.
