Pflanzliche Öle enthalten unterschiedliche Fettsäuremuster, die maßgeblich von der jeweiligen Pflanzenart abhängen. Dabei sind die Anteile von gesättigten, einfach ungesättigten und mehrfach ungesättigten Fettsäuren nicht bei allen Ölen gleich.
Fettsäuren werden unter anderem nach der Position ihrer Doppelbindungen in Omega-3-, Omega-6- und Omega-9-Familien eingeteilt. Bestimmte pflanzliche Öle liefern außerdem fettbegleitende Verbindungen wie Tocopherole oder Phytosterole. Die Gewinnung durch Pressung oder Extraktion beeinflusst die Zusammensetzung des Endprodukts.
Bei Speise- und Pflanzenölen ist es wichtig, das gesamte Öl von einzelnen isolierten Fettsäuren zu unterscheiden. Das Fettsäuremuster ist je nach Rohstoff unterschiedlich; auch Pressung, Raffination und Lagerung können die Begleitstoffe beeinflussen. Eine Mengenangabe in Milligramm Öl sagt noch nicht aus, wie viel von einer bestimmten Omega-Fettsäure darin steckt.
Öle bestehen überwiegend aus Triglyceriden, also Verbindungen von Glycerin mit verschiedenen Fettsäuren. Je nach Pflanze unterscheiden sich die Anteile von Linolsäure, Ölsäure oder Alpha-Linolensäure. Begleitende Tocopherole und andere fettlösliche Stoffe können ebenfalls natürlich enthalten sein.
