Pleurotus is rich in B vitamins such as B1, B2, niacin, pantothenic acid, B6 and biotin. It also contains folic acid as well as the vitamins C and D. A quarter of the mushroom’s dry substance consists of proteins and contains all essential amino acids.
Pleurotus ostreatus supports the growth of probiotic bacteria and can therefore contribute to a well-balanced intestinal flora.
A study of the Institute for Food Science and Human Nutrition of the Leibniz University, Hanover, Germany, concluded that the regular consumption of oyster mushrooms (Pleurotus ostreatus) could lower the triglyceride level. The investigation of the effect of oyster mushrooms on the human lipid profile under the leadership of Prof. Dr. Andreas Hahn and Dr. Inga Schneider had been sponsored by the Ministry of Economy and Culture of Lower Saxony, Germany, as a subproject of the research association of Agricultural and Food Sciences.
